S for Sugar n Spice #1

One of my favourite condiments to make is blueberry jam because it is very quick and easy to prepare; good to eat with almost anything or on its own; and quick and easy to finish.

Best part is, I do not even need to cook this particular jam on the stove.

Also, it seems to me that blueberries are in season all year round because there are always blueberries on the shelves of our local supermarkets - organic or otherwise.

Since I am not particular about organic stuff, I will just buy blueberries that are on the "quick sale" or "ready to clear" counters because most of the time, the blueberry jam I am about to make will not stay very long in my fridge anyway.

If sometimes I get blueberries that are a bit too sour for my taste, all I have to do is just add a little sugar because I like its natural sweet/sour taste (unlike the store-bought ones which are usually more sugar than the real fruit!).

Also, I do not need to add any thickeners like they often do for those store-bought jams because my homemade blueberry jam will naturally thicken once it is completely cooled.

I usually like to have my blueberry jam with my homemade breads, pancakes, muffins, tarts, waffles or as a cordial for my fruity drinks.

Enough said, here's how I made my jam.

Blueberry jam

What you need to have:

Ingredients
375g fresh blueberries
3 Tsp raw sugar (depends on the sweetness of blueberries)
1/2 tsp salt
1/4 tsp citric acid or 1 Tsp lemon juice

Apparatus
kitchen scale
measuring spoons
a medium-sized microwave oven-safe bowl
a spatula
microwave oven
a clean jam jar

What you need to do:

1. Place blueberries in the bowl. Rinse with tap water and drain well.

2. Add the rest of ingredients. Mix well.

3. Place in microwave oven and cook for 3-5 mins, until sugar is completely dissolved, at 30 secs intervals, stirring occasionally.

4. Cover with paper towel to prevent splattering.

5. Leave to cool completely. Once cooled, transfer into jam jar.

Refrigerate for up to 6 months or keep frozen for up to 1 year.

Enjoy!
